Recipe of Week 12: Green Pea Hummus

Green Pea Hummus
1 bag frozen peas, thawed
¼ cup extra-virgin olive oil
2 tablespoons lemon juice
1 garlic clove (optional)
Salt and pepper

Place all ingredients in a food processor and process until a smooth puree is formed, scraping down the sides as necessary, about 30 second total.
Transfer to a bowl and enjoy with pita chips, crackers, or carrot and celery sticks.

Tips:

Frozen veggies tend to be a little soggy when defrosted. Try straining your peas before using them to avoid overly wet hummus.

If your hummus seems too wet, try adding a can of chickpeas. If it's too dry and crumbly, add more olive oil or a little water.
