Celebrate Dry Beans, February's Harvest of the Month

Beans come in many different shapes, sizes and colors. Each one is unique for their flavor and texture, and they are all incredibly delicious. Try roasting chickpeas in a 350 degree oven with your favorite herbs, spices and vegetables for a half hour and then serving with a cooked whole grain for a quick dinner. Pureed cannellini beans with rosemary, olive oil and a little lemon juice makes a great lunchbox spread for whole wheat bread. The next time you're snowed in, try making Boston Baked Beans and serve them with a grainy mustard, sausage & sautéed kale.
