Let's Celebrate April's Harvest of the Month, Seafood!

April is the perfect month to celebrate the fruit of the sea, and the farmers and fisherfolk that provide it for us. Fish, shelfish, and seaweed are all nutrient dense and versatile foods to work into your diet. Smoked and fermented fish products are great bases for lots of amazing recipes, gently cooked fish filets make for tasty and light dinners, seaweed snacks (like this month's recipe) are downright addicting, and oysters, like those from Blue Moon Oyster farm, are delicious raw. As an island we celebrate seafood every month, but we couldn't help but give it a little extra spotlight this Spring!
